for the spelt bread
Mix the yeast with 100 ml water and the sugar until it is dissolved. Let the mixture rest for about 5 minutes. Meanwhile you can already put the flour, the flax seeds and the salt in a large mixing bowl.
Add the cider vinegar, the remaining water and the yeast mixture and knead the dough for 3-5 minutes with the dough hooks of your hand mixer.
Line a box form with baking paper and fill the dough into the form. Tap it a few times on the countertop so that there are no large air holes later.
Put the bread in the cold oven and then turn it on at 200 degrees bottom/top heat. Bake the bread for one hour and then leave to cool (for at least 2 hours).
for the avocado bread
Remove the avocado from its skin and mash it thoroughly with a fork on a chopping board or plate. Season with salt, garlic powder and a few drops of lime and mix well.
Mash the beans with a fork as well and season with a little salt and pepper. Meanwhile, brown a slice of bread on a toaster or in a frying pan.
First place the crushed beans on the bread and then the avocado cream. Then top everything with the avocado topping (this is really a heart-felt recommendation of mine :) )
for the Vitello Tonato Bread
Place a few slices of chicken breast on the bread. Pour 1-2 tablespoons of the Vitello Tonato cream over it and top it with a few pickled capers.
