Peel the sweet potato and grate it roughly with a box grater. Then mix the grated sweet potato with the eggs and oat flour and season generously.
Heat a non-stick pan and spray with a little bit of non stick cooking spray or olive oil. Pour ¼ of the batter into the pan and press it slightly into a flat shape. Fry on both sides for about 3-4 minutes. Feel free to make two hash browns at a time in one large or two small pans, it will be even faster that way.
